Dr Monee Shamsher, Research Scientist, Leatherhead Food Research
Monee has worked as a Molecular Biologist in multidisciplinary research field for over 25 years. She uses her expertise in developing molecular biology techniques for applications in the food industry and is responsible for the daily management of speciation tests for food fraud and authenticity.
Having identified a technology gap in the detection of meat and fish authenticity, Leatherhead Food Research has developed a general screening tool for the speciation of any DNA-detectable adulterant in cooked, raw or processed foods. Unlike other methods, the technique generates DNA sequence data that tells you exactly what species are present in a sample (even in mixtures). This eliminates the need to specify what you are looking for at the outset, reducing analytical costs and boosting efficiency.
